Hake is a white fish which is rather grandly referred to as ‘the king of the fish’ by the Spanish. It makes a good alternative choice to other white fish such as cod or haddock. Due to its firm flesh, hake can be prepared in many ways from barbecuing whole to pan-frying the fillets.
